Exact same issue I had with Goldeneye - tried editing the PARAM.sfo with PS3SFOEDIT but it wouldn't save the changes, so if you have the original PARAM.sfo file from the game rip, use that instead, and change the firmware version if needs be.
Try editing the PARAM.SFO with a Hex Editor to see if it makes a difference. I haven't played with this yet myself.
@ PatrickBatman: GT5 update does not contain sprx or similar.
you'll find a fixed GT5 BCES00569 1.10 update on the link above! unfortunately it black screens after the polyphony digital screen and we suppose it wasn't properly resigned by scetool. (metadata/header could not be decrypted) missing keys maybe?
The GT5 BCES00569 1.10 update fix from gDrive's link above worked for me.
I was on 1.09 and simply installed the OFW 1.10 update and then installed the fix on top and the game boots up; says it's now 1.10. There's new suits and music tracks but curiously, I haven't found how you save during the endurance races - which is the whole point of trying to get this update!?!
There's supposed to be an 'interrupt' button in the Quick Menu but I don't recall seeing one. It's late here now and I've switched the console off. I'll have another look tomorrow and report.
Edit: I just found out that the 'interrupt button' is only for championship races, not endurance races... that sucks!

After I read on ps3 c r u n c h that someone booted BCES00569 successfully, I tried again (even though I just had tried the same procedure 5 mins ago).
I installed all the patches up to 1.10 and then the fix "EP9001-BCES00569_00-GRANTRSM5PFIX110.pkg (25.8 MB)"
So I got past the polyphony screen this time, but:
stopped my enthusiasm.
I tried to load the game again and voilą it installs the 8GB game data now! hopefully we can save during endurance races because that was my initial intention of updating GT5!
What is still interesting:

and who did it with which tools??? In order to get future updates working, we really have to figure out what was/is wrong with creating the fixes.
You have any kind of source on this? Or, an update. I am sitting here on 3.64 waiting for some linux so, that would be great down the road alongside showtime. Also, if you are in the know, will that include the "un-hackable" 3xxx models? I would imagine it would just be something in the firmware working with the rootkit sony implanted into the system... Hope they remove that in any CFW down the road.

Its almost been 2 years since CFW 3.55 came out, cant imagine what goes through your head not being able neither to play backups neither originals (at least recent ones) or go online on that one

I feel so much better lately. These type doctors are really there to find out your problems & not treat your symptoms only. My immune system was basically not functioning. Well, yea I have been waiting it out, but I have a 360 for games I need to catch up on, so as long as I practice being patient then I should be fine. Hell, I have only played one game so far on it, and that was MGS4... Just have to have some patience.

Just to confirm @fotti, yes that is the file I used and yes the game is fully working with no issues. As I said above, I was already on 1.09 and simply updated to OFW 1.10 before applying the patch you've identified.
As far as the save function is concerned, at least now we can save in the middle of those later championships that take almost as long as an enduro race to complete.
